In a medium bowl, combine the chicken strips with soy sauce, oyster sauce, hoisin sauce, and cornstarch. Mix well and let marinate for at least 15 minutes.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, heat the remaining tablespoon of oil. Add the onion, red bell pepper, broccoli, snap peas, and carrot.

Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.

Add the garlic and ginger to the skillet and stir-fry for another 1-2 minutes, until fragrant.
