Carrot and Potato Fritters

  • Squeeze out any excess moisture using a clean kitchen towel or paper towels.

  • Add the flour, Parmesan cheese, beaten egg, green onions, garlic, salt, and pepper to the bowl.

  • Heat the olive oil in a large skillet over medium heat.

  • Scoop about 1/4 cup of the mixture and form it into a patty.

  • Place the patty in the skillet and flatten slightly with a spatula. Repeat with the remaining mixture.

  • Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy.
