Banana and Spinach Stuffed Bell Peppers (Vegetarian)

  • Preheat the oven to 375°F (190°C).

  • Place the bell peppers in a baking dish, cut side up.

  • Heat the olive oil in a large skillet over medium heat. Add the onion and sauté until softened, about 5 minutes.

  • Add the garlic and cook for another 1-2 minutes, until fragrant.

  • Stir in the cooked quinoa, diced bananas, and chopped spinach.

  • Cook for 2-3 minutes, until the spinach is wilted.

  • Remove the skillet from heat and stir in the crumbled feta cheese and chopped parsley. Season with salt and pepper to taste.

  • Spoon the quinoa mixture into the bell peppers, packing it down slightly. If using, sprinkle the grated mozzarella cheese on top.

  • Cover the baking dish with foil and bake for 30 minutes.

  • Remove the foil and bake for an additional 10 minutes, until the peppers are tender and the cheese is melted and golden.

  • Serve hot, garnished with additional parsley if desired.
