Preheat the oven to 375°F (190°C).

Place the bell peppers in a baking dish, cut side up.

Heat the olive oil in a large skillet over medium heat. Add the onion and sauté until softened, about 5 minutes.

Add the garlic and cook for another 1-2 minutes, until fragrant.

Stir in the cooked quinoa, diced bananas, and chopped spinach.

Cook for 2-3 minutes, until the spinach is wilted.

Remove the skillet from heat and stir in the crumbled feta cheese and chopped parsley. Season with salt and pepper to taste.

Spoon the quinoa mixture into the bell peppers, packing it down slightly. If using, sprinkle the grated mozzarella cheese on top.

Cover the baking dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, until the peppers are tender and the cheese is melted and golden.
